As we say the ever-so-dreaded “so long!” to summer in the next few weeks, it’s back to school for the kiddos and back to reality for parents. Time to dust off those lunch boxes, revamp those shopping lists, and think of new ways to keep our families eating healthy (and loving it too!).
Between our careers and taking care of the family, most of us have a full plate (no pun intended). If you follow a packed schedule with early mornings like I do, try planning ahead and preparing simple meals the night before.
You know what they say; breakfast is the most important meal of the day. Important especially for our growing children, it revs up their brains and bodies for the day, helping them do better in class. Try these tasty, make-ahead, protein-rich Breakfast Pinwheels and a side of fresh fruit to jump start the morning.
For lunch, finger foods are always a favorite in my house: easy to prepare, and fun to eat. A traditional sandwich goes great with a nutritious snack, like a simple Munch Bowl. My little ones love the mixture of Cheddar Cheese with fruit and crunchy nuts, and I can feel good serving it to them because it’s a healthier choice for their growing bodies.
After a long day at school, an apple with an ounce of cheddar cheese usually does the trick to tide them over till dinner. Or, if you’re looking for a fun after-school activity, task them to make their own Crazy Bobs(guidance may be required for younger children, however). Preparing their own snack will not only save you time, but it’ll get your young ones excited to be in the kitchen and eating healthier.
When it’s finally time for dinner, pop these “lightened up”, make-aheadStuffed Shells in the oven, steam a quick batch of veggies, and enjoy a nutritious and delicious meal with your family.
