Just in time for summer, our friend Chef Mareya, also known as "The Fit Foodie," has created some delicious recipes just for FIT4MOM! Check out her delicious tips for a yummy Polenta Veggie Bake below.
Polenta Veggie Bake
Recipe Servings: 4
14 oz Prepared polenta (in a tube)
2 medium Zucchini w/skin, diced into small cubes
1 1/2 cup Tomatoes, coarsely chopped
1/2 cup Fresh basil, chopped
1 cup Part skim mozzarella cheese
1 cup Fat-free ricotta cheese
1/2 cup Water
1 tsp Sea salt
1/2 tsp Ground black pepper
1 tsp Olive oil
1. Preheat oven to 450 degree F. Coat a 9-by-13-inch baking dish with cooking spray.
2. Heat olive oil in a large non stick skillet over medium-high heat. Add zucchini and 1 Cup of the tomatoes and cook, stirring occasionally, until the vegetables are tender and just beginning to brown, 4 minutes. Season with salt and pepper; remove from the heat and stir in basil.
3. Place polenta slices in a single layer in the prepared baking dish, trimming to fit if necessary. Top with the zucchini mixture and sprinkle with 1/2 cup of mozzarella cheese and ½ cup of ricotta cheese. Top with another layer of polenta and top with the remaining cheese and ½ a cup of the tomatoes. This should resemble a lasagna. Bake until bubbling and the cheese has just melted, 12 to 15 minutes. Let stand for about 5 minutes before serving.
