Yummy, Healthy Spring Recipe: Dark Chocolate Dipped-Fruit Centerpiece

Ahhhh Spring is in the air (almost!). There is nothing I love more than a nice spring brunch with family and friends. The only problem is, sometimes its hard to find a tasty dessert that isn't awful for your waistline. Enter our fabulous friend Chef Mareya from The Fit Foodie. This recipe is not only yum-tastic,but it makes for an adorable centerpiece too!


Recipe Servings: 4

Simple and delicious, makes an impressive centerpiece and a fun activity with the kids or a Valentine's Day treat.

8 oz 70% or higher cacao dark chocolate, broken into pieces or chunks

1/4 C Unsweetened coconut milk

1 tsp Pure almond extract

2 Bananas, medium sized, ripe, cut into 2" chunks

12 Strawberries, medium sized, firm

1 Mango, medium sized, peeled and cut into 1" slices

1 Mango

4 Wooden skewers or popsicle sticks

OPTIONAL: 2 Tbsp Crushed walnuts

  1. In a small saucepan, bring 2 cups of water to a boil. Reduce heat to low. 2. Place a glass bowl on top and melt chocolate with coconut milk and almond extract, taking care to stir so chocolate doesn’t seize. You can also use a double boiler to melt chocolate 3. Remove bowl and let chocolate sit for about 5 minutes to cool slightly. 4. In a small saute pan, toast almonds over low heat, moving them around pan, until light golden brown. Thread banana onto skewer or popsicle stick. Dip half of fruit pieces into melted chocolate. If desired, roll carefully into crushed walnuts. Repeat until all pieces are dipped. 5. Place dipped bananas onto a tray lined with wax paper and freeze for at least 4 hours, preferably overnight. Arrange sticks in whole pineapple for a fun centerpiece. Serve and enjoy!!
