Recipe: Superkid Energy Bar

Banish travel boredom with good eats kids can choose any time they want it. Load your travel lunch boxes with Organic Valley Single Serve Milks, Organic Valley Stringles cheese, and these delicious, no-bake energy bars.

This recipe can be adapted in so many fun combinations that kids never tire of it.

· 1 cup raw almond butter

· 1⁄2 cup honey

· 1⁄4 teaspoon vanilla extract

· 3 cups crispy rice cereal (white or brown)

· 2⁄3 cup organic raisins

· 1⁄3 cup raw sunflower seeds

· 1⁄3 cup shredded coconut (optional)

· 1⁄3 cup chocolate chips (optional)

· 1⁄4 teaspoon Organic Valley Butter

In a large bowl, mix raw almond butter, honey, and vanilla extract until smooth.

Add raw organic seeds (sunflower, sesame, or hemp), unsulphured organic dried fruit (raisins, craisins, cherries, etc), and other optional delight (coconut, chocolate chips, etc.) and mix until well coated.

Pour brown rice crispy cereal into the mixture gradually and fold it into the mixture, adding more cereal and folding again, until an even consistency is reached and cereal is fully incorporated.

Press energy bar mix into a buttered 8x8 pan, firmly.

Cover and refrigerate or freeze for 2 hours prior to service.

To serve, cut into small squares (a little bar goes a long way!), and serve with a tall glass of Organic Valley Milk!

It’s wise to use raw (not roasted) almond butter to preserve the integrity of essential fatty acids. Add a splash of organic flax seed oil to the mix for an Omega-3 brain boost!
