Moms, Meet Your Nutritional BFF: Quinoa!

Moms, have you gotten on the quinoa bandwagon?! Once you get on, you won't want to get off! Quinoa is a super-duper super food. It has a ton of protein (8 grams per cup), which helps you feel satisfied, and has 5 grams of fiber per cup which makes you feel full. It is considered a complete vegetable protein because it contains all the essential amino acids, and is gluten free. Quinoa was referred to by ancient Incan societies as the “mother of all grains”, but although it resembles a grain, it is actually a seed and is in the same family as spinach and beets! High in magnesium, copper, iron, I could go on and on about how amazingly healthy these cute little gems are. Here is a yummy quinoa breakfast option from our brilliant friends over at Eat Cleaner.

Supercharged Quinoa Breakfast Bowl

Recipe Servings: 4-6

1 cup quinoa dry

2 cups coconut milk unsweetened

1 tsp stevia

1/2 cup unsweetened coconut flakes

1/2 cup almond raw

3 Tbsp dried cranberries 1/2 cup walnuts chopped

Recipe Instructions: 1. In a medium-sized saucepan over medium-high heat combine the unsweetened coconut milk (or your favorite unsweetened dairy-free milk), and quinoa. Bring the mixture to a boil, then reduce the heat and allow the mixture to simmer for 15 minutes, or until most of the liquid has been absorbed. 2. Remove from heat. Stir in the stevia. Top with banana, shredded coconut, and nuts. Serve warm with additional non-dairy milk if desired.
