Fit Foodie Recipe: Triple Berry and Spinach Salad

Triple Berry and Spinach Salad

Serves 4


1 bunch spinach

1/4 cup mint leaves, lightly chopped

1 cup raspberries

1 cup blueberries

1 cup strawberries, trimmed and cut in half

For the dressing:

1 tbsp. extra-virgin olive oil

1 lime, juiced

2 tbsp. rice vinegar

½ tsp stevia or monkfruit extract

Sea Salt or Kosher Salt and black pepper to taste


½ Cup slivered almonds, toasted for 1 minute on each side in a dry pan

1. Pre-wash spinach, mint, raspberries, blueberries and strawberries with Eat Cleaner All Natural Fruit + Vegetable Wash. Set aside to dry.

2. Place all dressing ingredients in the bottom of a large salad bowl and whisk together until emulsified. Toss with spinach.

3. Gently toss in the berries before serving and top with toasted almonds
